Pathiri is a tradional Malabar breakfast made with rice powder.The thin crepes are served in side with thick coconut milk and any curry of our choice. Here I'm using brown rice powder; that's why my pathiri looks slight brown in color instead of nice white. You can use any roasted rice powder. Ingredients:- Roasted rice powder-2 cup
- Water-2 cup
- Salt-to taste
- Oil-1 tsp
Preparation:
- Boil water in a large bowl; when it boils add salt and oil.
- Slow down the flame and add rice powder and mix them well for two minutes.
- Switch off the flame and transfer in to a wide bowl to cool little.
- Knead them to a smooth dough (knead while still hot but manageable with your hands)
- Divide the dough in to lemon sized balls.
- Take rolling pin; dust it with rice powder and roll the ball in to thin circle; by rolling them gently as thin as possible.
- Heat a tawa and cook on both sides like paratha (when cooked correctly; it will puffed up fully).
- Serve them in side with curry.
